Spicy Roasted Parsnip Soup Recipe
Parsnips I hear you say!? Really not that keen, but hold on, once roasted with spices, these take on a wonderful, rich, sweet taste. This spicy roasted parsnip soup recipe is perfect lunch foo,d but interesting enough to serve to guests for supper. This delicious soup is easy to make and has many health benefits. Ingredients
2 tbsp Olive Oil
2 tsp Coriander seeds and cumin seeds
1/2 tsp turmeric
1/2 tsp mustard seeds
1 onion cut into 8
2 garlic cloves
700g Parsnips peeled and diced
2 tomatoes quartered
2 carrots diced
1.2l vegetable stock
1 tbsp lemon Juice
Directions
Heat oven to gas 7 /200c. Mix oil and spices together in a large bowl and add all the vegetables. Spread over a heavy baking tray and roast for 30 mins.
Once the vegetables have roasted, put them in a large pan with the hot vegetable stock, bring to the boil and simmer for five minutes . Add lemon juice and check seasoning. Finish with toasted cumin seeds. Spicy roasted parsnip soup recipe.
