Chickpea and lemon soup

This soup is as thick as they come, it might not even be soup it is that thick, so I hope you are all hungry. Nutty, buttery Chickpeas are brought to life with zest and juice of lemons and a sprinkling of rosemary. I tend to use tinned chickpeas but dried are so much better (just can’t plan that much ahead)

Ingredients

2 tbsp Olive Oil

1 garlic clove

250g dried Chickpeas soaked overnight or two tins

2 sticks Celery

Lemon juice and zest

1tbsp Fresh rosemary

salt and pepper

1.2l vegetable stock

Directions

Heat the oil and add the rosemary to flavour the oil, add celery, onion and garlic and sweat for ten minutes. Add the soaked chickpeas (if using tinned reduce cooking time to ten minutes) vegetable stock and lemon zest. Boil for ten minutes then simmer for 40 minutes or until the chickpeas are soft, blend and add the lemon juice and season. To serve dress with a sprinkling of fresh chopped rosemary

Vitamin C is also vital to the function of a strong immune system. The immune system’s main goal is to protect you from illness, so a little extra vitamin C may be useful in conditions like colds, flu’s, and recurrent ear infections.

Did You know…

Catalan priests excommunicated the lemon. They claimed that the devil had created it but had not succeeded in making it round and perfect and it was therefore deformed.
